Traditionally, port wine was served in sipping pipes, which look like large glass tobacco pipes, such as this. The stem of the pipe acts like a straw, so you sip the wine from the bottom, drinking the port that hasn’t been exposed to air. This way, most of the liquid is untouched by oxygen, reducing oxidation and preserving the wine’s original, intended flavour. Port sippers date back to the 17th century.

How to Make a Port and Tonic Cocktail
Fill the glass with a Port and Tonic (Porto Tonico) cocktail.
A light, slightly sweet and refreshing cocktail that’s easy to make.
Method
Add 2 ice cubes to the glass.
Pour one part Port with 2 parts Tonic Water.
Wash and slice the orange. Add an orange slice to the glass.
Top with a sprig of mint.
